A 10-minute walk from the west exit of Yokohama station, I came to the Yoshimuraya, which is said to be the origin of Iekei ramen. It's a super famous ramen shop.
※Iekei ramen=Iekei, or house style ramen, is a style of ramen with fatty pork-soy-sauce flavored soup with thick flat noodles. And they are affiliated chain ramen houses originating from Yoshimura-ya Ramen house in Yokohama.
In 1974, Minoru Yoshimura, who was a long-distance truck driver, opened a ramen shop along the Isogo Sangyo Road parallel to National Route 16 near Shinsugita Station in Sugita, Isogo-ku, Yokohama. In 1999, it moved to Minamiyuki Nishi-ku, Yokohama-shi, Yokohama Station west exit, to the present.
It sells 1500 cups of ramen a day.
The noodles are thick Sakai noodles, thickly sliced chashu, 3 large pieces of seaweed that sticks out of the bowl, some yellow soup made from chicken fat, and spinach that is served as a blue tint. The soy sauce pork bone soup used contains 1 ton of pork bone and 500 chicken shells per day. The amount of baked pork used is 50 kg or more per day.
The menu is only ramen and various toppings, but customers can freely specify the hardness of the noodles, the amount of fat in the soup, and the intensity of the taste, as well as seasonings such as garlic, soy sauce, and pepper on the table. It has a wide variety of choices, such as customers can use it according to their preference.
This flag showed the owner's policy. It said that the customers were mentors of the taste of ramen I created.
Line Up After Purchasing Meal Ticket
At 4:00 pm on weekdays, waiting time seemed to be relatively short. I purchased meal tickets first and waited in line. There were about 10 customers in line. However, the rotation seemed to be good and I was able to get in before waiting for 10 minutes.
The visual of the clerks with the twisted headband was amazing. I'm looking forward to eat what kind of ramen.
Finally appeared!
Waiting 5 minutes, the ramen came. Some cabbage, a flavored egg and a couple of chashu were added to the normal size of chashu noodles.

It's soup and noodles were good, regardless of the name of Ypshimuraya. It's not an odd taste, it's just an orthodox pork bone soy sauce soup and just delicious. I often mixed noodles with soup.
The cabbage doesn't become too soft, and the spinach remains crispy. Personally, the chashu with a smoky flavor was especially delicious. It looked like roast pork. The pink color remains.
The Yoshimuraya clerks were professional. Although it was a well-known store, there was no point of view from the top, "Thank you." "Please tell me if you have a request for the strength of the soup. You can change it." I was impressed by the politeness.
There are many ramen shops that work on a part-time basis, but the staff here were older than average. With the twisted headband, white T shirts and boots style, there was a feeling that it was a little different from other stores.
